This is all about lemon….and the “cookie cream” is sugar-free!  These cookies melt in your mouth- a soft chew and oh so creamy!  They taste great frozen too- kinda like an ice cream sandwich!

Ingredients:  almond flour, DK’s tigernut all purpose flour blend (organic tigernut flour, cassava flour, organic coconut flour, tapioca- over 80% of this blend is organic tigernut flour), organic lemon juice and zest, organic olive oil, organic unsweetened coconut milk, organic coconut palm sugar, organic chia seeds, organic lemon extract, organic vanilla extract, baking powder (wheat/corn free), sea salt.
Cookie Cream: swerve confectioners icing sugar, pro forest organic coconut palm shortening, vegan butter, organic vanilla extract.
