We all have our own food philosophy! DK has been striving to meet its own requirements since its beginning- 5 years ago!
There is no “gluten-free baking school” so I have been slowly moving along….progressing/experimenting in my little kitchen.
Holistic Nutrition is my background/certification and my “Grandma’s” and “Mom” taught me so much about food- translating all this to gluten-free has been the challenge.
I truly feel that now….DK has a line-up of products that I can call it “my own” as it meets my requirements in taste, texture and nutrition!
The Adventurous Sourdough now offers 5 exciting flavours and….3 crackers.
NO yeast NO starch NO xanthan.
HIGH in fiber and protein and LOW in carbohydrate laden flour.
Then…..the addition of a “living” sourdough starter….letting the bread/cracker have a nice little “rest” to deactivate all the enzyme inhibitors and phytic acid….you are now presented with a product that is easy to digest, fills you up for a long time and does not play havoc on your pancreas to digest the sugars that carbohydrates do.
