As much as DK loves to create a recipe from “scratch”, DK also loves to take Grandma’s Great Old Fashioned Recipe and convert it to gluten-free, refined sugar-free, dairy-free and…if possible- vegan. DK turned this early 1900 Buffalo Chip Cookie Recipe into a “crispy-chewy” mouth watering, delicious treat. We used DK’s All Purpose Flour Blend, switched the sugar to organic palm sugar and evaporated cane juice, used Earth Balance Vegan Shortening instead of shortening (sorry Vegan’s we could not remove the eggs…YET), sourced out Non GMO, organic corn flakes and…the rest is now history.
This recipe makes A LOT of cookies. I still have no idea why these are called Buffalo Chip Cookies but a Google search turned up one explanation: it’s a reference to their large size.
