I found this recipe in my Cookbook Collection but it was called Cowboy Cookies. Since I changed the flour, fat, sugar etc. if felt very suiting to change the name to Cowgirl Cookie- a girl baker living in the country! This recipe is not created solely by DK but it adapted very well with my “Extra Fine” Tigernut All Purpose Flour Blend. I like to take on a recipe and convert it “cup for cup” with this blend and see how it works. This recipe accepted my blend beautifully…I think you will love them as much as I do!
Ingredients: DK’s “Extra Fine” Tigernut All Purpose Flour Blend (organic tigernut flour, organic cassava flour, organic coconut flour, tapioca- over 80% of this blend is organic tigernut flour) organic/gluten free oats, organic sucanat, happy eggs, organic olive oil, organic coconut oil, pecans, organic/dairy-free chocolate chips, organic coconut flakes, organic vanilla extract, baking powder (corn/wheat free), baking soda and sea salt.
