In the gluten-free baking world DK needs to be creative to produce high quality food that meets our criteria: healthy, whole grain, moist, and tastes great!
DK could not create a Hot Cross Bun that would stay moist for longer than a day soooo….DK put the spice and fruit of a Hot Cross Bun into the Bagel Recipe….and what do you get….Hot Cross Bunagel.
Then there is Spanokapita….making Phylo Pastry gluten-free….hmmm….not happening here! lol
DK really enjoyed making Hamantaschen….then I got to thinking about a savory one, then I got to thinking that the pastry would not hold the spinach, then I got to thinking about the bagel dough holding up to the weight of the spinach and feta….and what to you get….Spanokapizza!
